Fall Pumpkin

A super cute, super EASY way to give your home that extra special, personal touch.... 
Chalkboard Message Pumpkin. 


Here's How:

1. Wash your pumpkin and let dry.
{I used dish soap and a wet paper towel. I did not submerge the pumpkin in water.}

2. Cut out a template the shape you want your message board to be.
{I found this label template HERE. After printing it and cutting it out, I taped it on my pumpkin.}

3. Trace around your template.


4. Paint with Chalkboard paint.

5. Do steps 1 through 4 as many times as you want!

6. When your chalkboard paint is dry, message away!

{'Give Thanks' is a perfect saying for the upcoming Thanksgiving Holiday!}

Here's a few tips:
- When changing your message, wipe lightly. If you rub hard, you run the risk of the chalkboard paint coming off. 
- Pick out smooth pumpkins. The more the ridges, the harder it is to write on the chalkboard.
- If your pumpkins are staying indoors, be mindful of where you set them. If they are on a wood surface, I suggest placing something to protect your wood under the pumpkin.
- Read your chalkboard paint instructions on the length of time to allow your paint to dry before writing on it. I waited 24 hours.
- You can paint your message board without using a template.
{Although the traced template line made painting with chalkboard paint easy.}

Pumpkin Chocolate Chip Blondies

Did you know that Saturday was National Pumpkin Day?

We celebrated by taking the kids to the Pumpkin Patch.

It was the Little Pumpkins first time!


Even though it was chilly, my Big Pumpkins had fun too!



 In honor of National Pumpkin Day I'm going to share with you my new FAVORITE pumpkin recipe.





These blondies are very easy to make, but I guarantee it's more fun with little helping hands!

 (I love the perfectly placed chocolate chips!)




These are as good as they sound, look and smell! They are super moist and the perfect dessert or snack.



Pumpkin Chocolate Chip Blondies
{from Carmel Potatoes}

What You'll Need:
2 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, at room temperature
1 1/4 cups sugar
1 large egg
2 teaspoons vanilla
1 cup canned pumpkin puree
1 1/4 cup chocolate chips, divided
Here's How:
Preheat oven to 350*. Line bottom and sides of a 9x13 baking pan with foil. In a medium bowl, whisk together flour, pie spice, baking soda, and salt. 
In a separate bowl, cream butter and sugar on medium-high speed until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree (mixture will look curdled). Reduce speed to low, and mix in dry ingredients until just combined. Fold in 1 cup of the chocolate chips.
Spread batter evenly in prepared pan. Sprinkle remaining chocolate chips over the batter.  Bake until edges begin to pull away from sides of pan and a toothpick inserted in center comes out with just a few moist crumbs attached, 30 to 35 minutes. Cool completely in pan.
Lift the blondies out of the pan and peel off the foil. Cut into squares and devour!

Nana's Pumpkin Cookies- Guest Post!

Two known facts about my In-law's:
1. My Father-in-law makes the BEST chili.
2. My Mother-in-law makes the BEST pumpkin cookies.



The perfect fall combo, don't ya think?

Fall would not be complete without Nana's Pumpkin cookies.
Church potlucks are not complete without Nana's Pumpkin Cookies.
I can't remember the last time I made a version of pumpkin cookies, simply because I knew I'd be disappointed that they weren't Nana's Pumpkin Cookies.

I LOVE them. My kids LOVE them. I LOVE them. (Oh wait, did I already say that?)

YOU.WILL.LOVE.THEM.


Seriously though, you are not completely enjoying fall until you taste these little pumpkin drops of Heaven. 
Funny thing is... I always thought they were a 'Super Secret Family Recipe'. Good for the world that they are not!!!

The Story of The Pumpkin Cookies...
I found this cookie recipe out of a cookbook that I received from my bridal shower over 33 years ago.  It originally called for raisins but I added chocolate chips instead and it has been a big hit whenever I take them anywhere :)

The cookies can be frozen. I line each layer with wax paper in ziplock containers. Ready to go whenever you need them :)! And I alway double this recipe because one is never enough:)!!


Pumpkin Cookies
1 cup sugar
1 cup pumpkin
1/2 cup shortening 
Mix together.

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt 
Stir together in a separate bowl and then add to pumpkin mixture. 

Stir in 1 cup milk chocolate chips. 

Drop dough by teaspoonfuls onto ungreased cookie sheet. 
Bake until light brown, 8-10 mins in preheated oven at 375 degrees. 

Remove from pan and cool. 
Spread with Glaze.


Glaze:
1/4 cup butter
2 cups powdered sugar
1 teaspoon real vanilla
1-2 Tablespoons milk
Melt butter then add powdered sugar, vanilla and milk. Stir until smooth. (For a double recipe I usually add another Tablespoon butter and another 1/2 cup powdered sugar to stretch the glaze a bit more) 

I put on the glaze just enough to cover the cookie; it's plenty!

Pumpkin Pie

I don't know about you, but my pumpkin pie habit is hard to kick every January. These yummy pies can be found everywhere in November and December. So, why not have that fresh pumpkin pie smell in your home all winter? If you agree with me, here's an easy recipe!

Pumpkin Pie

What You'll Need:
single pie crust
1 3/4 cups fresh (or canned) pumpkin
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 eggs, slightly beaten
3/4 cup milk


Here's How:
1. Preheat oven to 375*.
Prepare and roll out pastry for crust.
2. For the filling, combine pumpkin, sugar, cinnamon, ginger, and nutmeg. Add eggs; beat lightly with a fork until combined. Gradually add milk; stir until just combined.

3. Place the crust lined pie plate on the oven rack. Carefully pour filling into pie crust. 
Cover the edges with foil to prevent over-browning.
Bake for 25 minutes. Remove foil and bake 25 minutes more or until a knife inserted near the center comes out clean. 

4. Cool on a wire rack. Cover and chill within 2 hours.
Serve with whipped cream!

Pumpkin Oatmeal

Pumpkin Oatmeal
This could be that perfect, warm Christmas breakfast dish you are looking for...



What You'll Need:
3 cups quick cooking oats
1/2 cup brown sugar
1 cup milk
2 tablespoons butter, softened
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 teaspoon cinnamon
3/4 cup canned or fresh pumpkin
1/2 cup brown sugar (for the top)

Here's How:
In a large bowl, combine all ingredients except the 1/2 cup brown sugar (for topping).
Spread in a greased 9 x 13 baking dish.
Sprinkle remaining 1/2 cup brown sugar on top.
Bake at 350* for 20 minutes.

Serve warm with milk. Very satisfying and yummy!

31 Days of Things I've Been Wanting to Do, Day 29: Home Grown vs. Hand Picked

Home Grown
This was our first year at an attempt to have a tomato plant. And yes, I said attempt because, to date, we have had 4 tiny tomatoes come from one plant.

From the beginning, Reese especially was enthusiastic about growing our own food and making something from what we grew. I have done herbs the last few years with success so I thought we'd broaden our horizons. It budded 3 tiny green tomatoes and we waited, somewhat patiently, for them to turn any shade of red. One night, we had a big storm and our poor tomato plant got knocked over. One tiny green tomato fell off. Reese was so excited. We put it in the window and I said a little prayer that it would turn red....

And it did! It had a small blemish, so instead of putting it in a recipe, we sliced it to have with dinner.


(It didn't last very long!)


Hand Picked

Since we didn't include a home grown tomato in a recipe, I figured hand picking a pumpkin from a pumpkin patch was the next best thing.

This was my first time roasting a pumpkin. I'll admit, grabbing a can opener and opening a can of pumpkin might have been a little easier, but way less rewarding! I truly enjoyed preparing my own pumpkin!

Here's what I did...

Slice your pumpkin in half and take the seeds out.

Place the pumpkin cut side down in a 9x13 dish.
Add 1/2 cup of water to the bottom of the dish and loosely cover with foil.
Bake @ 325* for 1-2 hours. (Until your pumpkin is soft.)

Peel the skin away...

Place the pumpkin in a food processor...

Process until smooth....


My husband's Grandma gave me ideas on freezing the pureed pumpkin into small containers.
I did 1/4 cup, 1/3 cup and 1/2 cup containers. Brilliant!

Labeled the top...

And they are now frozen until the next time I need pumpkin!

I did leave some out for breakfast, of course....

Baked Pumpkin Oatmeal

What You'll Need:
3 cups quick cooking oats
1/2 cup brown sugar
1 cup milk
2 Tbs. margarine
2 eggs
2 tsp. baking powder
3/4 tsp. salt
2 tsp. vanilla
1/2 tsp. cinnamon
3/4 cup pumpkin
1/4 cup brown sugar (topping)


Here's How:
Mix all ingredients except brown sugar for the topping in a bowl.
Put in a 9x13 pan.
Sprinkle remaining brown sugar on top.
Bake at 350* for 20 minutes.
Serve with milk.

31 Days of Things I've Been Wanting to Do, Day 19: Pumpkin Cupcakes with Cinnamon-Cream Cheese Frosting

I was introduced to this recipe from a friend in a lady's group at Church. Ever since I tasted them, I have been wanting to make them! I had NO problem finishing off one during our group meeting. (Ok, really, it was two. And I might have licked the cupcake liner.)

 This recipe is sure to be devoured by pumpkin lovers like myself! The cinnamon cream on top is the perfect topping to this moist pumpkin cake!

What You'll Need:
1 pkg. spice cake mix
1 cup sour cream
1 can pumkpin
1/4 cup oil
3 eggs
1 8 oz. pkg cream cheese, softened
1/4 cup butter, softened
1 tsp. vanilla
1 pkg. (16 oz.) powdered sugar
1 and 1/2 tsp. ground cinnamon

Here's How:
Heat oven to 350*
1. Beat cake mix, sour cream, pumpkin, oil and eggs until well blended. Spoon into 24, lined muffin cups.
2. Bake 20 -22 minutes or tooth pick tested. (Inserting a tooth pick in the center and it comes out clean.)
Cool in the pan 10 minutes, then remove to cool completely.
3. Frosting: Beat cream cheese, butter and vanilla in a large bowl. Gradually beat in sugar. Blend in cinnamon and then pipe or spread the frosting onto the cooled cupcakes.


Please don't judge my Cupcake by it's cover!
Next time, I will be adding more powdered sugar to get my frosting to stay put.
Mine were messy! My husband was totally right when he said, "The messier, the better!"

31 Things I've Been Wanting to Do, Day 14: Pumpkin Wreath

Okay, so I have totally been picturing this 'pumpkin wreath' in my head. I haven't seen it anywhere but I've been searching (without any luck).  

I wanted a fall wreath that I could keep up longer than October 31st, so I headed to Hobby Lobby for some inspiration. That was mistake number one. It is not good for me to go into that store without a list of specific things I need! Mistake number two, only giving myself an hour to shop!
I stopped at Chick-Fil-A to get the little buddy some chicken, and away we went. (He is a MEAT eater. Forget the yummy chicken biscuits, just give him the chicken! The longer I feed him, the longer he sits in that cart for me!)

I ended up finding this roll of orange mesh decoration in the party isle. The rolls of ribbon and tulle were 1/2 off this week, so I picked up a roll of lime green, sparkly tulle. Then I spotted this oblong wreath and was shocked because I hadn't ever seen them this shape. They were 1/2 off too. (This is when I was thinking it's 'okay' to not have a list. Then I hit the clearance section, scrapbooking section, etc. When I saw my cart fill up, I was reminding myself why I need a list!)
(I also bought green raffia, but didn't use it.)

I knew I wanted the left side covered in orange, and I wanted some of the bare wreath showing because I love how rustic it is. I decided to try making 'bubble gatherings'. I pulled out my wire and wire cutters and then decided how I was going to gather the mesh.

I pinched the mesh like this....

Gathered it tight...

And then did that again....

I joined those two pinches and wired them together to make a 'bubble'...

I left some room between the 'bubbles' because I wanted to have some wiggle room when I attached them to the wreath.

Then you just keep pinching, gathering, wiring.... ( I was about 1/4 of the way done here. By the time I was done, I used almost the whole roll of orange mesh.)

I attached the mesh to the wreath with wire. If you don't trim the wire ends after wiring the 'bubble' together, you can use the end pieces to wire it directly to the wreath.

I continued wiring my mesh 'bubbles' up the left side of the wreath. When the wreath was 1/2 covered, I started to think of the 'green stem part' on a real pumpkin.
I unrolled the green tulle. Because it is so thin, I decided to continually wrap it in a circle. Ending with this...

Then I gathered it in the middle, secured it with wire and cut the ends so they were free...




I attached that to the top of the 'pumpkin' and this is what I had...

It was fine, but it just needed something else....  Then I remembered some 'viney things' that I bought last year after Christmas on super clearance at Target....

I loved the unevenness of the wreath itself. I especially love the 'wild vine' that is coming free of the wreath shape. So, I stuck a few pieces of this extra twig decoration into the back of my 'pumpkin'.

And wha-la! A pumpkin wreath...
( And no, not an 'O' for October as my husband said....) :)
